What's the Best Red Wine You
Can Remember?
Most of us only know whether we like red
wine better than white, not what we liked as the
best red wine we ever tasted. Generally
speaking, red
wines are more complex, drier and age better than whites.
Taste is really what "best" is all about, and
how we treat wine actually affects its taste. Rest,
temperature, breathing and the "art" of tasting will dictate
whether or not any red wine is your
best.
Wine rushed to the table from a delivery cart can
never be at its best; it suffers from being moved. Two or
three days R&R in a cool dark place will allow even the
old reds to regain their balance and character. Red
wines are usually best served at 58°F & 65°F.
Let red
wine breathe! Whenever possible, open red wine at
least one hour before serving so it can aerate. This
enhances its subtle flavors and aromas, and makes a tremendous
difference in its character.
Take a sip and work it
around your mouth for several seconds. Notice how much more of
the wine's flavor you can taste. Take another sip, work it
around again, purse your lips and then suck a little air
through it before swallowing. Notice how you can taste/smell
even more of it this way. That's because you have deliberately
released the wine's aroma and bouquet. Then there's the
"finish" - the taste that's left in your mouth after the
swallowing - the longer the finish, the better the wine.
Adopting this routine will allow you to more fully enjoy any
wine. Maybe your next red
wine will now be the best red wine you
ever "tasted".
