Sparkling wines are naturals when it comes
to Romance, Fine Dining, Celebrations or Entertaining! Ever
notice people's reactions when Sparkling
Wines are served? Most everyone responds to
sparkling wines with an "Umm, Champagne" -

wines, regardless of what we call them.
Although
the process for making sparkling wines is
time consuming and involved, simply put, sparkling
wines are those which undergo a second fermentation,
which causes carbonation, which in turn causes bubbles; the
smaller and the longer lasting the bubbles - the better the
bubbly. The taste of sparkling wines ranges
from brut - the driest with no sweet taste to extra dry - with
a slight sweet taste to sweet. From dry or sweet you should
have no problem finding sparkling
wines to satisfy your taste, as well as your
budget.
Sparkling Wines: Serving and
Preserving!
Chill it; Uncork it; Admire it;
Taste it. In general sparkling wines should
be chilled to around 48°F to 54°F. An ice/water bucket is the
quickest way to chill sparkling wines - less
than 15 minutes if left standing; a matter of several minutes
if you twirl it.
Sparkling
wines are too good of an investment to waste by
splattering the walls and ceiling. To open sparkling
wines, dry the bottle, hold it parallel to the floor,
grasp the cork tightly with a towel in hand and twist the
bottle gently, not the cork - should work every time.
Glasses for serving sparkling wines
should be clean, dry, tall and pointed at the bottom. This
allows sparkling
wines to show off their bubbles. After all,
appearance is half the fun in drinking sparkling wines.
And if sparkling
wines aren't completely consumed once opened? Most
sparkling wines will be good the next day if
resealed properly with a special cork made just for left-over
sparkling wines (commercially available most
anywhere for under $10). Now, a French wine merchant's
grandmother says you can preserve sparkling
wines until "tomorrow" by inserting the handle of a silver
spoon into the bottle (without touching the bubbly), and
letting it stand open, but refrigerated. Let us know how yours
